From London - Ryanair fly from London Stansted to Carcassonne. Carcasonne is a 20min drive to Caunes Minervois. Ryanair also fly to Perpignan, which is 1hr 15 from Caunes by car.
Easyjet fly from Gatwick to Toulouse. Toulouse is 1 hr 20 min drive to Caunes Minervois
British Airways fly from Gatwick to Toulouse. There are 3 flights a day
From Bristol - Ryanair fly from Bristol to Beziers. Beziers is approx an hour drive from Caunes Minervois. Beziers is East of Carcassonne near Montpelier
From Bradford and Manchester - It is possible to fly to Toulouse via Gatwick with BA from Manchester and direct flights from Leeds with Jet2 but the days they fly are a little sporadic
Flights from outside the UK - It is worth looking into flights to Madrid, Paris or London followed by a connection to Toulouse

It is possible to get a ferry crossing for £28 each way with Speed Ferries. They run Dover to Bologne. From Bologne its 650 miles to Caunes and takes 2 days at a leisurely pace or 1 day straight without stopping.
